National Peanut Butter & Jelly Day with a Guest Post!!!

Today is National Peanut Butter and Jelly Day! To properly celebrate this American classic, one of my best friends (who is also a food blogger) and I decided we would do guest posts on each other's blogs! We have been planning this for weeks and are very excited about it, and I know you will enjoy it, too!
Before I turn things over to her, let me introduce her to you! Elizabeth of Pantry Dreams is a lady much after my own heart. We met in our somewhat crazy college days while we worked together at Walmart. Eventually, our friendship blossomed over food-themed "O.C" nights, rounds of pool and beer at the local bar, and some really fun-filled times in the kitchen, creating and cooking together. I was lucky enough to get to room with Elizabeth for awhile, and our friendship only continued to grow from there. She is a talented, creative, and intelligent lady who adores food ALMOST as much as she adores her family and friends.

First off I am so honored and excited to be a guest for If It Bakes You Happy! Amber is one of my foodie besties, so being able to be here for her means everything to me!! We decided to theme our posts today and we picked a classic. Peanut Butter and Jelly! Not just your plain old pbj either. We're doing a twist on it. I chose PBJ Thumbprint Cookies! I know. Sounds Aaah-mazing. And they are. I actually stole acquired this recipe from my sister, who has made these several time with very popular results. After tweaking here and there, I got what I was going for. And my results?? Equally as popular as my sister's. I hope you enjoy these as much as we do!
Peanut Butter and Jelly Thumbprint Cookies
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup shortening
1 cup peanut butter
1 cup firmly packed brown sugar
1/3 cup sugar
3 Tbsp milk
1/2 tsp vanilla extract
1 egg
1/2 cup unsalted peanuts, chopped
1/4-1/3 cup peanut butter
1/4-1/3 cup jam, any flavor you want (I used strawberry here)

Preheat oven to 375° F. Line cookie sheets with parchment paper. In a medium bowl, combine flour, baking soda, and salt. In a large bowl, cream together shortening, peanut butter, and both sugars. Add in milk, vanilla extract, and egg. Mix until combined. Add in flour gradually and mix thoroughly. Stir in chopped peanuts.

Roll dough into 1" balls and place on lined cookie sheet, approximately 2-3" apart. Make a divot in the center of each ball with your thumb, knuckle, rounded spoon, or whatever. Your dough may split on the outer rim of the cookie after making the divot. Just kinda squish it back together a bit so the filling doesn't ooze out during baking. Spoon in 1/2 tsp peanut butter into each divot, followed by 1/2 tsp jam. Bake for 10-12 minutes, or until edges of cookies begin to brown. Cool for a couple minutes before transferring to a cooling rack. Eat with a LARGE glass of milk!!
